Simple Coconut Egg Tart

Hope you all enjoyed Mother’s Day yesterday, and as you may have realized, I was treated to dinner last night, so no challenge!

But I did do some baking, this was to give to a special group of mothers, mothers from playgroup who supported me on the fund raising event.

Rachel’s favorite Egg Tart. I’m sorry this recipe is so simple, but for busy mums, aren’t simple yet tasty recipes the most useful?

Ingredients ( to make 12 regular muffin size)
-3 Puff pastry sheets
-3 Free range Eggs
-200ml Organic milk
-6 Tablespoon Organic raw sugar
-3 Tablespoon Cornstarch
-12 Tablespoon shredded coconuts
-2 teaspoon Organic vanilla essence

Method
Step 1: Cut each pastry sheet into 4, line muffin tin with pastry. Skew some holes in base with fork. Preheat oven to 200C.

Step 2: Beat eggs, milk, sugar, coconuts and vanilla in a large bowl, pour into muffin tin.

Step 3: Bake in oven for 20-25 min, rest in tin 5 min before taking out to cool on cake tray.

The easy part about this is you don’t have to precook the pastry, it will still come out crunchy. In my oven I have to cover the right hand part with foil for the last 8 min because it seems to be stronger on that end!

Hide’s Lunch

So, I cooked fresh rice for breakfast. What do I do with it? Prepare some lunch for my husband Hide!

A very simple lunch, but is should keep him going through the afternoon!

20120511-181023.jpg Using the rice, I made two different types of rice ball, one is with my  “Handy salmon flakes” and another is with “Umeboshi (pickled plum)”.

For the side dish, I cooked some “Dashi-maki-Tamago (rolled egg)” and vegan burger again! This time, using chickpea and celery.

I will ask him how he liked it, and then introduce the recipe!

30 min Dinner : Chicken Kara-age with Ponzu, Marinated Cucumber, Tomato Salad

I dropped my i-phone under water, and this is making it hard to take photos and update my blog 😦 Sorry for the inconvenience.

 

No matter how sad or upset you are, one must still eat, and this is another super fast dinner menu that you can cook on a day to make you feel better. The cucumber and tomato can be made earlier in the day, in fact it is better to have the cucumber marinated for at least 30min, to make this dish first!

 

So, the order would be:

 

Step 1: Boil eggs, prepare marinated cucumber(5min)

Step 2: Slice tomato, marinate chicken (5min)

Step 3: Prepare Tomato Salad on plate (5min),

Step 4: Cook Chicken Kara-age with Ponzu, serve everything and eat!!!

 

The tomato salad is soooo simple, yet really tasty, one of my favorite summer dish that my mum used to make. It is good for children too! When I give it to my 17 months daughter, I chop the tomato into dice and instead of dressing, I just squeeze some lemon on it.
